Raised bowls suit tall breeds and dogs with neck or joint discomfort, since they reduce the downward reach at every meal. The general guide is bowl rim at roughly your dog's lower chest height when standing normally.
Stainless steel is the default recommendation. It does not harbour bacteria in scratches the way plastic does, it does not absorb odour, and it goes in the dishwasher. Ceramic is fine provided the glaze is food safe and the bowl is not chipped.
